Wine in kegs, unlike other methods of wine preservation, is protected against oxygen because it is kept in a closed container. Even after “gassing”, sparkling wines can still be poured from the bottle. Guests don’t ask for Aperol No-Spritz. They are never as clear.
There are many types of kegs available, but all work the same way to prevent air from damaging wine and, in turn, guest enjoyment. Some stainless steel kegs, as well as certain one-way ones, have stems that run from the coupler at the bottom of the container (similar to a long straw). Inert gas is pumped into the top to drive the wine down and up through its stem. Inert gas is devoid of oxygen, which can cause freshness to be reduced. KeyKeg kegs include a gas-impervious plastic bag that keeps the wine inside. Any type of gas, including air, can be injected between the outer wall and the interior of the bag. This forces the wine through the faucet.
Stop Corked Wine
If your staff thoroughly examines each bottle, you can spot corked wine easily. If you are able to spot it, the smell of moldy, cardboardy wine is easily detected. Let’s face the facts, bartenders are often too busy to do this. Cork failure can lead to wine oxidation, which can leave it with a bitter, unpleasant or vinegary taste. Cork failure could have occurred in up to one of twelve bottles of wine in the past. Although the industry has made efforts to reduce this problem, it still happens. If it does happen, you should get credit for any faulty bottles. Otherwise, your earnings will be affected. This is not an issue with draft wines as kegs do not have corks.
Margin Increased
It is much easier to calculate BTG when operators take BTG from a wine bottle than from bottles. Kegged wine costs less per ounce than bottled wine, especially when splits are used. Splits are often used by operators to reduce the loss from half-off bottles of Prosecco at night. However, the per-ounce price is high! Sparkling wine in bottles is much less expensive.
BTG specials can result in higher margins and lower prices. Corked wine is a waste of money, which can have a direct impact on profit margins. It can affect your bottom line as well as your reputation if you have to comp another glass of wine because it is contaminated.
